o.k. some of us have different opinions on deer hunting and i was just wondering;
HOW MANY DEER DO YOU TRY TO PROCESS EVERY DEER SEASON?WHETHER IT IS MAKING BURGER,PUTTING MEAT IN THE FREEZER,JERKY,SAUSAGE,WHATEVER.BE HONEST WHEN YOU REPLY,LET ME KNOW,I'M CURIOUS!

like you, I end up not only processing my own, but at least 2 or 3 for others a year. If I had to stab at it, with the exception of last season, I usually take care of an average of 6 or 7 in a season.

bout 9 or 10 gets us through the year
and we give the rest to non hunting family and friends

I normally process a couple. I like deer but I don't want it exclusively. It has its purpose but it does not replace beef or chicken!:happy0003:

I dunno....after having buckhunter's set-it-and-forget-it deer shoulder....I could almost give up beef. Almost. I like a good steak. Chicken, I can do without, except for good southern fried chicken.

As I said, I like deer just fine but the fact is, it isn't beef. It doesn't have the fat content or texture and there are some beef dishes that deer just is not appropriate to replace. There is not a cut on a deer that is comparable to a good marbled beef ribeye!

I know...the fat is the good stuff, I agree. Back home where I had a local butcher, when I did my venison burger, I could go to the shop and buy beef tallow on the cheap, and grind it up about 80/20. made for some daggone good vennyburgers.

deer sausage is the only sausage we eat
deer burger good for chili and spaghetti
when it comes to burgers on the grill well thats gotta be beef
when i want a juicy steak thats gotta be beef
still eat chicken and pork and when thanksgiving comes around we eat turkey
we got 3 families eating the deer we put in the freezer each year so 9 or 10 was a bit misleading

that or a fillet is the only beef i buy.buy them whole,age,slice and wrap them for the freezer.love a big ole ribeye!

ah..dang on the beef....gimme some pig any day. Or maybe a peck of them oysters that buckhunter scabbed up the other day....

Since I process all my own venison I get tired of it after my limit of 5-6 deer which I am fortunate enough to have the time to get nearly every year.My grandbabies have been eating jerky as treats since they cut teeth and now I am OBLIGATED to kill at least two deer each season just for that alone. They start asking about it on Labor Day to remind me since they are spread all over the country and have to get it mailed to them. Backstraps always get saved as thin cut small "steaks" as well as a couple hind quarter roasts that get used for everything from fajitas to roasts to steaks etc etc etc. I double grind the rest and mix it 5-1 with a log of 80/20 burger from Walmart. I find that gives a much better flavor that just adding pure fat. ( To each his own ). Burgers done this way and grilled are far better than plain beef. The jerky is forever gonna be done with coarse GROUND venison since I tried it that way this past season. When it is seasoned and cured properly and shot through a jerky cannon with a flat nozzle, the strips can be made the perfect size to fit in a zip-loc sandwich bag for use on hunting/fishing trips.
I don't exist on an exclusive venison diet......that could get boring. Still buy occasional steaks/pork & chicken just for variety but the meat bill is far lower thanks to deer.
There you have a long winded answer from someone who was just bored this snowy AM........

I enjoy Venison. I also greatly enjoy BEEF, and chicken. I also love pork. Heck, I'm not very picky when it comes to food. I must admit, I like clams better than oysters and I prefer Scallops and shrimp over almost any seafood except crabs. I love me some Maryland Blue Crabs. As for processing my own. I haven't had a deer in probably 2 years. I just haven't hunted the amount that I want to!

did i mention how good they were and that i had about 3/4 of a bushel leftover!mite have to open some up and have some fried real soooooon!

i waited until now hoping to get a few more responses to this thread but anyway hear goes.
every year i process as many deer as i can get ahold of!this past season i ended up doing 14,5 that i killed and 9 that were give to me.last year i didn't do any because i was away for the year shrimping and didn't get to go hunting,first year in 20 years i had to buy hamburger from the store for the house.year before that i did 36,made a lot of burger,sausage,thin slices of backstraps,shoulders for roast and fillet of backstraps.i have 4 or 5 different ways i cut the meat to use for different things and personally i love a whole backstrap on the grill!
25 seems to be a good number for me to do a year.plenty of burger,roast,slice meat etc.etc.,the only meat i usually buy at the store is a couple rib eyes every year for the freezer to have one of those big ole juicy steaks that doghunter suggested earlier.i hate to see a deer go to waste!too much good meat-the year i did the 36,4 or 5 of them were road kills!if i can get the hams and backstraps off of one i'm goin to cut him/her up!
i give some meat away every year it seems like,mustang got some burger-manxx got a shoulder-and my buddy i shrimp with got 80lbs of burger and a couple shoulders out of the ones from this past season.i didn't put up as much meat as i wanted too but i shouldn't have to buy any burger this year anyway.
i use what meat i can use on a deer-neck,shoulder,backstrap,ham,heart,tenderloin and even some of the livers.i spend quite of bit of time cutting and preparing the meat,i'm not into eating dirt,bloodclots or bone fragments!i treat it like it is prime rib or fillet mignon and it gets eat around here!

few years ago my sister worked for a guy that wanted every heart i could get him
i know people say its good eating but just not for me(and yes im knocking it without trying it)
