Anyone have any good recipes for deer bologna? It is very popular where I was raised in MD and would really like to try and make my own or see if I can enlist a local butcher to make some. I sure do miss it.

I'm in Goldsboro and I've never heard of such a place. I would love to know if you can find find out. In the meantime I'll ask around with some of my hunting buddies. I'm sure if they do deer bologna they may also do other specialties such as summer sausage which I would be interested in.

The ones I used to have were about 3" diameter and 2' long wrapped in a cloth skin. They would hold up a long time and you could cut a nice piece off and take it out in the field and have a good snack all day. Some people made it on the sweet side and others made it spicey. Thanks for for the input everyone.

I heard the bass pro shop carried kits to make deer summer sausage and bologna.
